Zesty Quinoa & Turkey Salad

Step up your bowl game at lunch with our deli-style Oven Roasted Turkey Breast in a fresh, zesty, and protein-packed mix of grains, fruits, and nuts.

What you need
2 cups red quinoa, cooked
1 cup red apple, diced
1/2 cup walnuts, toasted & roughly chopped
1/4 cup green onions, chopped
3/4 cup lemon zest
2 tbsp. of apple cider vinegar
2 tbsp. of lemon juice
2 tbsp. of honey
1 tsp. of lemon zest
1/2 tsp. of garlic, grated
1/2 tsp. sherry vinegar
salt and pepper, to taste
1/4 cup of extra virgin olive oil
How to Make it
1.Combine all of the dressing ingredients except olive oil, salt, and pepper in a medium bowl
2.While whisking, add olive oil in a steady stream until emulsified
3.Season to taste with salt and pepper
4.Set aside. Combine the remaining ingredients in a medium bowl
5.Drizzle with dressing and stir to combine.
